The Ultimate Vegetarian Nachos...

I told Oz today while balancing my cell between my face and shoulder, and grabbing bags of supplies from the front seat of the car, that I had woke up this morning thinking about making some awesome vegetarian nachos.

"You must be an empty-headed person..." he said.

Touche.

The reality of it is I woke up this morning with SO MUCH more than just making nachos on my mind. Between my family, school, work, moving, D, my friends, my money, my writing and the intense pain I've had in my back for weeks now, I was completely drowning in thought. The sun was blazing through my window but the air had been on all night and the temperature was perfect. My bed felt inviting and soft and it tempted me to sleep in even later than I already had (11:30 am). Instead, I decided to push all those nasty "grown up" thoughts out of my head, wake the hell up and just make some awesome nachos.

The problem is whenever you get nachos your left at the mercy of the venue. Limited to their ideals and preference. Some people consider nachos to be some crusty tortilla chips smothered in melted American cheese (you'll find this strain mostly in bowling alleys and ballparks). Some places make awesome nachos....cheese, jalapenos, guacamole...the works. However in my experience, the people who make the best nachos usually top it all of with chicken, pig or cow. Three things I don't consume. So today instead of sitting and write angrily in my journal about the desperation I feel inside or the admission I made last night which I swore I'd never tell anyone or the fact that I have to move (again) although it's dreaded and sometimes feels like a bad decision; I simply made nachos. I made them with a big goofy smile on my face. And I made them with soy beef.

They were so delicious that D, who had already eaten decided to help me finish them off. They were so good, that I forgot to snap a picture of them before they were completely devoured.

Mmmmm....denial tastes like happiness.

Oprah Gives Out Free Chicken....Gee Thanks...

For those of you who have not heard of the BOUNTEOUS gift Queen Oprah has bestowed upon us all, let me be the first to inform you.

Oprah Winfrey is now giving away free 2-piece chicken meals (including 2 sides and a biscuit) to all those who want it.

Not that the gesture, I'm sure isn't good news for munchie-hungry pot heads, college students and of course...people living in poverty who no doubt have access to a computer...(ahem). Seriously, though....chicken? KFC chicken at that. For someone who is SO focused on health, eating right and staying fit (although she fell of that wagon too many times to name), she sure cheaps it up when it comes to showering her fans with "gifts".

I guess it's easy for me not to show my appreciation...I don't eat chicken!!

I mean, hello?? What about the MILLIONS of vegans and vegetarians, Oprah? How bout passing out something people really need?.... Like fresh fruit or gas for their tank..?? While your in such a giving mood why not use the millions of dollars it cost to pull this stunt and put some money into our sinking economy?

I understand that Oprah has done a lot...I mean the Oprah Book Club (in which she stamps her unnecessary approval on already classic novels), the African girls school (never mind that she left out millions of African BOYS) and of course, the ever-popular gift-giving ceremony she holds each year for Christmas (when she hands out millions of dollars worth of free shit that no one ever needs).

Maybe I'm just a disgruntled vegetarian, or maybe I'm not alone in this....Oprah woke up one day and decided to feed her minions.

"Hmmm..." she thought, "What do all my negro fans need that I can give them....??"

Greasy Chicken!!!

Vegetarianism: Day 5

So the upside of being a vegetarian is that my food costs a little less. Today I braved the cold (and I mean C-O-L-D) to walk a block to Chipotle. I ordered the burrito bowl, meatless with veggies, rice, sour cream and guac...YUMMMM. It was totally delish and cost $1.50 cheaper.

I'm starting to get the hang of this.

Vegetarianism: Day 1

Ok, so this vegetarian thing isn't so bad. I had soup for lunch and made sure it was made with vegetarian broth. It was delish, and filling, nothing hard about this thus far.

I imagine since I was never really a "Meat Eater" to begin with switching over to the other side won't be as hard for me. D told me yesterday that he feels weird if he doesn't eat meat for a few days. I decided to hold my tongue and not say "that's probably the sensation of feeling healthier..." and instead just agreed. He's been eating meat his whole life, so have I. Although when I was little I was less into it. I liked the skin on fried chicken and bologna. But other than that, I remember my parents had to all but force me to eat meat. Later in life, after getting my first apartment, I noticed my grocery money lasted longer when I left meat out of the equation. So other then happening upon a grossly marked down piece of meat, I really avoided it altogether when I lived alone. When I'm out, eating meat has always been a choice of convenience. Everything that's easy and cheap to eat has meat in it. Hot dog vendors, hamburger spots, pizza places....hard to find like a zucchini on a stick, ya know?

But so far, this whole not eating meat makes me feel better. We'll see how I feel at the end of the week.
